Tortellini Recipe with Radicchio and Parma Ham

Here is our Tortellini recipe pick for National Tortellini Day (February 13)!

Servings: 4 people



  • Tortellini for 4 ppl
  • 7 oz. Flour
  • 4 Egg whites
  • 0.7 oz. Shallot
  • 3.5 oz. Parma Ham (small cubes)
  • 9 oz. Radicchio
  • 1/2 glass Red wine
  • 1.8 oz. Parmesan cheese
  • 4.2 oz Butter
  • Salt to taste
  • Pepper to taste
  • 10 leaves Sage



  • Knead the flour and the egg whites, then let it sit in the refrigerator for a half hour
  • Grill the radicchio and cut it in thin stripes
  • Grind the shallot and sautée in 0.7 oz of butter
  • Add the radicchio and the Parma ham to the shallot, simmering it with the wine until reduced; then let it cool
  • Add the Parmesan cheese and salt and pepper to taste
  • Cook the tortellini, then add the sauce you prepared along with the rest of the butter and the sage
  • Sprinkle with parsley before serving
